STUFFED PEPPERS IN ZESTY TOMATO SAUCE

Lecsó or lecho is the traditional Hungarian method of stewing peppers with ripe tomatoes, onions, and paprika. There’s no exact recipe—it’s a rustic, end-of-the-summer dish that’s meant to swoop in when you have an overflowing garden. These stuffed peppers are a play on lecsó that was popular in Georgia when my mom lived there. The hollowed-out vessels are filled with sautéed sweet carrots and cauliflower, then smothered in a spicy tomato-pepper sauce before being baked until wrinkled and charred in spots. They’re delicious warm, but I find that they really shine when they’re served chilled (which is also how we usually eat them).
